Berelia Mushrooms grows organic oyster varieties in a closed, climate-controlled facility where humidity, CO2 and light are tuned to the substrate rather than the season. That control is what lets a fruiting body form the wide, fanned cap and fine gill structure that chefs and buyers actually judge quality by — instead of the thinner, irregular growth of open-air production.

Each stage runs in its own room, under its own climate profile — separating the biology from the weather.

01 Substrate Certified organic straw and grain, pasteurised and inoculated with Berelia's own spawn.
02 Incubation Dark, warm rooms let mycelium colonise the block fully before any light is introduced.
03 Fruiting Humidity and fresh air are raised together to trigger the fan-shaped fruiting body.
04 Harvest Hand-cut at peak cap tension, graded, and cold-chained the same day.
